After several years working in kitchens, Patrick Burr knew two things: he loved working with food and hated working for someone else. Determined to become his own boss, he started brainstorming with friends about his next move and quickly came to the realization that Montana’s short growing season made it prime for canning. Jam making, pickling, and preserving would also give him an opportunity to support local farmers and be inspired by the bounty.
Despite having little experience canning, Burr dove in, leasing a warehouse in Bozeman, MT, and turning it into a commercial kitchen, where he got to work experimenting with different recipes. Burr explains, “I was always pretty confident in the kitchen and just started making up recipes and making up small batches. Some things worked out and some things didn’t.” And with that, Roots Kitchen & Cannery was born. Patrick’s adventurous spirit resulted in unique flavor combinations like Plum Sage Jam, Curried Carrot Pickle (2018 Good Food Award winner!), and this month’s Featured Jam, Blackberry Earl Grey Jam.
Packed with bold blackberry flavor and a thick, luxurious texture, Patrick’s Blackberry Early Grey Jam tastes exactly the way spring should feel. Earl grey tea adds a delightfully subtle floral note with a hint of citrus from the bergamot, making this jam an ideal addition to any PB&J, vanilla ice cream, or freshly baked scone. We love it in tea sandwiches with our Mission Almond or classic Peanut Butter, dark chocolate chips, and toasted coconut.
