It’s rare to find a business that operates for decades on the principles it was founded upon; never compromising quality for efficiency, and never putting profits over integrity. American Spoon is one of these businesses. When Justin Rashid and Chef Larry Forgione founded it in 1982, their goal was to produce “the finest fruit preserves in the world from Michigan fruit.” Justin sought out superb fruit varieties grown by local farmers, and Larry created recipes to celebrate them.
Thirty-seven years later, Justin, along with his wife, Kate Marshall, and their son, Noah, still operate American Spoon. They’ve never wavered from their mission, and they still maintain close-knit relationships with their farmers to source the best possible fruit varieties. Their small team of skilled cooks makes each batch at their kitchen in Petoskey, MI . They prepare the fruits by hand and cook them with care in small-batch copper kettles, resulting in lush, full-flavored jams.
Our June 2019 Featured Jam, Sour Cherry Preserves, epitomizes American Spoon’s ethos. It’s loaded with Montmorency Cherries, Michigan’s most famous fruit, cooked down just enough to intensify the vibrant flavor but leave the integrity of the plump fruit intact. A touch of sugar and lemon juice are added to balance the cherries. The result is tart, slightly sweet, and packed with incredible cherry flavor. We love it in a classic PB&J or spooned over ice cream for a decadent treat.
