No exaggeration: when we started sharing test batches of our new Lemon Cashew Butter recipe with friends and family, they became obsessed, asking us for regular updates about when we’d be making it again. A few months ago, when asked what she wanted for her birthday, one of our founders’ nieces got right to the point: “Some of that Lemon Cashew Nut Butter, please.” We obliged, of course, and she promptly hid the jar where no one else could find it.
It’s been a challenge to keep this one a secret, but we are excited to finally announce the release of this highly anticipated entry to our Limited Batch nut butter series. A blend of organic cashews, organic virgin coconut oil, lemon, coconut nectar, and sea salt, this nut butter’s flavor is reminiscent of lemon cookies flecked with cashews and sea salt. The tartness of the lemon is a splendid foil to the creamy cashews, and the coconut nectar adds just the right amount of sweetness. How have we not thought of this combination sooner? We don’t know, but we’re pretty sure Lemon Cashew Butter is nut butter you’ll crave after a single taste.
