Our new Limited Batch Cowgirl Cookie Peanut Butter starts by blending pan-roasted Organic Texas pecans into our freshly milled High-Oleic Runner peanut butter. We then mix in toasted coconut, dark chocolate chips from French Broad Chocolates, our own small-batch granola, cinnamon, vanilla, coconut nectar, and Jacobsen sea salt. Imagine your favorite sweet-salty trail mix, but in cookie form, then transformed into a crunchtacular nut butter!
A downright jamboree of delightfully crispy and crunchy textures, this nut butter does justice to the “cookie” in its name. According to myth, “cowboy cookies” might have been the original “energy bars,” eaten on the range as snacks that held up well in saddlebags. Thanks to their all-star roster of cookie ingredients, these cookies have been known to win even urban and coastal bake-offs, and we can see why they’ve caught on beyond the West.
The original idea for this nut butter came from our Co-Founder Mark’s cousin, Leigh, whose generous contribution to our 2022 crowdfunding campaign earned her the perk of thinking up a “dream nut butter” for us to make. When she suggested the idea of a “Cowboy Cookie PB,” we couldn’t get it out of our minds and started working on it. Of course, we had to change “Cowboy” to “Cowgirl” to honor Leigh, who has called Texas home for decades. Thank you for the inspiration, Leigh!
