Nut butter bars—great adventure fuel ANDDDD great cheesecake crust!!! Add a little *zest* to your next snack by whipping up these Cherry Chocolate Crust Cheesecakes!
Our protein-packed bars combine with extra nut butter for a rich, flavorful base, and the lighter combo of cream cheese + Greek yogurt marry with a few pantry ingredients to create a delish, protein-packed dessert that’s a fun (easy!) twist on a classic. For a fun spin on our recipe, swap in any recipe of our bars and nut butters to create your own custom flavor profile!
INGREDIENTS
- 8 oz cream cheese
- 1 cup greek yogurt
- 1/3 cup honey
- juice of 1 lemon
- 1 tsp vanilla bean paste
- 2 Big Spoon Cherry Chocolate Peanut Butter Bars
- 1/3 cup Big Spoon Roasters Bourbon Pecan Peanut Butter
PREPARATION
- In a food processor, combine the Cherry Chocolate bars and Bourbon Pecan Peanut Butter. Pulse until it comes together. It will not be completely cohesive, but will come together once pressed into molds.
- Portion the crust into 6 small jars (we re-purposed jars from our Mini 3oz Nut Butters!) and press down to form a cohesive crust. Set to the side.
- In your cleaned food processor, combine the cream cheese, greek yogurt, honey, lemon juice, and vanilla bean paste and puree until smooth and fluffy.
- Put 1/6 the filling atop the crust in your small jars/containers.
- Refrigerate until set (we only chilled ours for about 15 minutes, but this is super customizable!).
- Top with your favorite fruit or sweets, serve, and enjoy!
