At Big Spoon Roasters, we’re committed to changing the way people think about nut butter, and that means constant innovation. Together with our Limited Batch Series, our R&D Nut Butter Series is a major part of that commitment.

It's rare for even a small batch food-maker to create eight new recipes in a year, much less to commit to creating eight new recipes every year! However, creating these new recipes brings us great joy, and we're so excited to share them with you! 

Our super-small R&D batches allow us to push the limits of what a nut butter can be, and to do that, we draw inspiration from all kinds of things, including favorite ingredient combinations and textures that may only exist in our imaginations. Great food memories also inspire us to keep dreaming, experimenting, and infusing creativity into our recipe development process.

 

Our Spring 2023 R&D Batch is Lum Lum Thai Curry! 

In Northern Thailand, “lum lum” is slang for “delicious,” and we think it’s the perfect way to describe our latest R&D Batch nut butter – Lum Lum Thai Curry!  This nut butter was inspired by the traditional Thai red curry paste (prik gaeng ped, phonetically) that serves as the foundation of our favorite Thai dishes. 

This vegan R&D Batch is handmade with High-Oleic Cordoba Runner Peanuts, Organic Fair Labor Cashews, Hubs Virginia Peanuts (for extra crunch), Organic Coconut Nectar, The Spice House Thai Red Curry spice blend, and Jacobsen Sea Salt. Redolent of galangal and lemongrass, the spice blend at the heart of this nut butter also includes red chiles, coriander, paprika, lime peel, garlic, and shallots, and all are freshly milled and hand-blended by our friends at The Spice House

Popping with bright flavor, just the right amount of heat, and a perfect sweet-salty balance, this nut butter is a ready-made dipping sauce for summer rolls, vegetables, or anything else you want to enhance with multi-dimensional crunch and spice. Enliven avocado toast, spice up noodles, or just dive in with a spoon – you truly can’t go wrong!
