Bursting with the bright flavors of raspberries and lemon and a cashew-almond blend reminiscent of freshly baked shortbread, this nut butter is our (vegan!) spin on one of our favorite seasonal treats.
Linzer Cookie features a blend of Organic fair labor cashews and heirloom Mission almonds that combine with Organic coconut nectar, Organic maple syrup, vanilla, and Jacobsen sea salt to create a spoonable take on the buttery-sweet sandwich cookies of the namesake treat. Freeze-dried raspberries and lemon oil marry for a zingy, delightful ode to the classic jam filling.

HISTORY OF THE LINZER COOKIE
The Linzer cookie is based on the iconic Austrian dessert, the Linzer Torte. The almond-based, jam-topped torte has been popular in Austria for centuries, in addition to being a historic confection—the 1653 recipe from Countess Anna Margarita Samarosa is thought to be the oldest surviving cake recipe. The Linzer Cookie is believed to have been created in 1822 by the husband-and-wife baking duo of Johann Konrad Vogel and Katherine Kress (according to Das Grüne Archiv). After moving to Linz, the couple began making the torte-inspired cookies dubbed “Linzer Eyes,” referencing the traditional geometric cutouts revealing the jammy center. The cookie made its way around Europe and to the United States by way of Austrian immigrants and is now a much-loved treat, often enjoyed between Christmas and Valentine’s Day. UK “biscuit” lovers know this treat as Jammie Dodger, one of our favorite cookie names ever.
