At Big Spoon Roasters, we’re committed to innovation. We posted about one element of that commitment, our Limited Batch nut butter series, last week, and today, we're highlighting another: our R&D nut butter series.
It's rare for even a small batch food-maker to create eight new recipes in a year, much less to commit to creating eight new recipes every year! But, we like a challenge!
Our super-small R&D batches allow us to really push the limits of what a nut butter can be, and to do that, we draw inspiration from all kinds of things. Favorite ingredient combinations, textures that may only exist in our imaginations, and, of course, great food memories inspire us to keep dreaming, experimenting, and infusing play into our recipe development process!
We've been dreaming about this season's R&D recipe for a long time, and we couldn't be more excited to share about our Bourbon Pecan Crunch Peanut Butter! This recipe is handmade with fresh-roasted high-oleic Cordoban peanuts, bourbon-roasted pecans, Vermont maple syrup, applewood smoked sea salt, and just a touch of Kentucky’s favorite export.
Here’s what you can expect from this season’s R&D Batch: First and foremost, this recipe presents a classic, roasted peanut butter flavor. Right behind that, you’ll get the lightly sweet crunch of the bourbon-roasted pecans with gentle undertones of maple, bourbon, and smoked salt. We think this recipe is perfect for oatmeal, toast, cookie recipes, and, of course, spoonfuls right out of the jar.
Important note – the alcohol in the bourbon-roasted pecans has been cooked away, and this delectable peanut butter is well below the maximum percent alcohol by volume (ABV) of 0.5%. In fact, this nut butter has about the same amount of alcohol by volume as most commercial kombuchas, which is to say, very little.
You may be aware of this, but most “bourbon” and “bourbon barrel” food products achieve the bourbon taste profile by using chemically created “natural flavors.” We are committed to exclusively using real, minimally processed ingredients, and as such, we don’t use shortcuts like that. We took a more culinary approach to this recipe, and hope you enjoy it as much as we do!
