At Big Spoon Roasters, we’re committed to changing the way people think about nut butter, and that means constant innovation. Together with our Limited Batch Series, our R&D Nut Butter Series is a major part of that commitment.
It's rare for even a small batch food-maker to create eight new recipes in a year, much less to commit to creating eight new recipes every year! However, creating these new recipes brings us great joy, and we're so excited to share them with you!
Our super-small R&D batches allow us to push the limits of what a nut butter can be, and to do that, we draw inspiration from all kinds of things, including favorite ingredient combinations and textures that may only exist in our imaginations. Great food memories also inspire us to keep dreaming, experimenting, and infusing creativity into our recipe development process.
Our Summer 2023 R&D Batch is "Bright & Stormy" Almond & Cashew Butter!

Our Summer 2023 R&D Batch is inspired by the classic “Dark ‘n Stormy” cocktail of dark rum, ginger beer, and lime. Invented in the 1920s with a name trademarked by the dark rum maker Goslings, the recipe has its origins in a Bermuda ginger beer factory that ran as a subsidiary of the Royal Naval Officer’s Club. Apparently, thirsty sailors discovered that a splash of the local Goslings Black Seal Rum and a wedge of lime were just what the ginger beer was missing. The name of the cocktail was said to have originated when an old fisherman observed that the drink was the “color of a cloud only a fool or dead man would sail under.”
Whatever the case may be, we are big fans of their concept! The invigorating "storm” of ginger and lime in this nut butter recipe is anything but dark, so we named this summer’s R&D Batch “Bright & Stormy.” We think you’ll taste the sunshine and lightning in the jar!
This vegan R&D Batch is handmade with heirloom Mission variety almonds, Organic Fair Labor cashews, Organic coconut nectar, crystallized Fiji ginger, ginger powder, dehydrated lime juice, and Jacobsen sea salt. A touch of Organic cocoa butter is blended into the recipe to mimic the deep, tropical notes of Caribbean rum. Expect a perfectly balanced bite that starts with the roasty goodness of our almond & cashew blend and ends with a burst of citrus you’ll be craving later.
So far, our favorite ways to eat this nut butter are on slices of fresh summer pears (like Bartletts), in Greek yogurt parfaits, spread on warm waffles, and atop Club crackers with a Dark n’ Stormy cocktail nearby. This R&D Batch is also amazing in a smoothie with banana, almond milk, and avocado.
