
When we saw @Oatsngelato’s recipe for Tiramisu Banana Bread, we absolutely *had* to try it with our Tigerwalk Espresso Almond Butter! Just take one look at the texture of this bread and you’ll see why it’s our latest breakfast obsession.
Ingredients:
- 2 ripe bananas - 100g maple syrup
- 2 eggs
- 4 Tbsp Big Spoon Roasters Tigerwalk Espresso Almond Butter
- 60g oat flour
- 40g cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
Frosting: 1 cup Greek yogurt (For a sweeter taste, substitute dairy-free whipped cream or frosting)

Instructions:
1. In a large bowl, mash bananas by hand. Add eggs, maple syrup, and Tigerwalk Espresso Almond Butter and mix until smooth.
2. Sift and whisk in oat flour, cocoa powder, baking powder, baking soda and salt.
3. Pour batter into a non-stick loaf pan and bake at 350° F for 30-40 minutes (constantly checking, I ended up baking it for 30 minutes).
4. Let bread cool completely. Then, spread Greek yogurt + sift cocoa powder on top.
5. Enjoy!
