When we saw @Oatsngelato’s recipe for Tiramisu Banana Bread, we absolutely *had* to try it with our Tigerwalk Espresso Almond Butter! Just take one look at the texture of this bread and you’ll see why it’s our latest breakfast obsession.
INGREDIENTS
- 2 ripe bananas
- 100g maple syrup
- 2 eggs
- 4 Tbsp Big Spoon Roasters Tigerwalk Espresso Almond Butter
- 60g oat flour
- 40g cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
PREPARATION
- In a large bowl, mash bananas by hand. Add eggs, maple syrup, and Tigerwalk Espresso Almond Butter and mix until smooth.
- Sift and whisk in oat flour, cocoa powder, baking powder, baking soda and salt.
- Pour batter into a non-stick loaf pan and bake at 350° F for 30-40 minutes (constantly checking, I ended up baking it for 30 minutes).
- Let bread cool completely. Then, spread Greek yogurt + sift cocoa powder on top.
- Enjoy!
